Adam Pacitti arrives in Texas to shoot a follow-up to his own film 'Pinfall: A Professional Wrestling Documentary,' meant for British television, and the wrestling angle collapses almost immediately. Left alone with a camera crew and no real plan, he turns the trip into something else: a string of encounters with competitive eaters, gun owners demonstrating their Second Amendment rights at the range, cowboys, and conspiracy theorists who each explain Texas on their own terms. Partway through, a stranger emails offering to be his personal tour guide, and that unplanned friendship becomes the closest thing the film has to a spine. Pacitti narrates his own disorganization onscreen rather than editing it out, including the broadcaster pulling out once they saw what he'd shot. The result is less a portrait of Texas than a record of what happens when a documentary loses its subject halfway through filming and the crew keeps rolling anyway, catching whatever crosses their path instead.
