Oysters have been farmed in Arcachon bay, in southwest France, for more than a century, but the trade is getting harder to sustain. Frédéric and Luca Simon run a traditional operation, selling from their hut in Andernos-les-Bains and at local markets, and after years of thin margins they are betting on a new restaurant to keep the business afloat. Axel Boudard, a newcomer to the oyster beds, takes a different route, leaning on marketing and social media, a strategy that has not endeared him to the established farmers around him. The film follows both approaches while tracking a less visible problem: oyster theft, sometimes on a large scale, that has grown common enough that maritime police officer Jérôme Goussard patrols the bay checking boats, including those belonging to local farmers themselves, since the thieves are often neighbors rather than outsiders. Climate change and rising tourism add pressure on water quality and the farmers' margins. Behind the picturesque huts and calm water, the documentary shows an industry where competition, suspicion, and economic strain are constant.
