MIT OpenCourseWare offers this advanced graduate course on the physics of structured liquids. Topics cover self-assembly theory in surfactant-water micellar systems and surfactant-water-oil micro-emulsions, the theory of polymer solutions, and scattering techniques including light, x-ray, and neutron scattering used to probe the structure and dynamics of complex liquids. The course also covers modern liquid-state theory as applied to supramolecular structured liquids. Materials come from MIT's Nuclear Science and Engineering, Physics, and Chemical Engineering departments and follow the standard OCW format of lecture notes and problem sets, free to access under a Creative Commons license. This is a technical course aimed at students with a background in statistical mechanics and thermodynamics, not an introductory survey.
